Spiced Peach and Apple Chutney

This chutney makes use of Peaches, which are in plentiful supply at this time of year. It’s a treat to enjoy in sandwiches, with roast meat, hot or cold and with your barbecue. It is also great with a cold meat salad and it is a condiment you can really use throughout the year. We used white vinegar in the mix and this seems to give the finished chutney a bit of a zing in the after taste. The other change we made was blending the whole pot when it finished cooking which made it reasonably smooth but still left the fruit a little chunky, which seemed to add to the flavour.
 
Ingredients:
1.9 kg of Peaches, stoned and chopped into small pieces
2 red onions, peeled & chopped roughly
1 white onion, peeled & chopped roughly
5cm piece ginger, peeled and chopped roughly
4 red gala apples, peeled and chopped roughly
2 red chillies, more or less to taste, chopped roughly
2 tsp Chinese five-spice powder
2 tsp coarsely crushed black peppercorn
2 tsp salt
600ml white vinegar
600g white sugar
200g brown sugar
 
Method:
Put the apples, chillies, ginger and onions into a large pan add the chinese five spice, pepper, salt and vinegar. Bring to the boil, then simmer for 15 mins, stirring occasionally.
Add the peaches and sugar and simmer for a further 10 mins until the peaches soften. Increase the heat and simmer for a further 20 minutes (stirring occasionally to ensure the mixture doesn’t catch) until the mixture thickens. At this point you can leave it chunky or use a stick blender to achieve a smoother consistency. 
 
Put into sterile jars and allow to cool. You can store this chutney for up to a year in a cool dry place, but once it is open, refrigerate it!
